Red berry fruit terrine

This is a pretty, fresh terrine to serve on hot nights. Don’t be frightened by the gelatine, it is easy to do and comes out perfect!

800gr mixed dark red cherries,strawberries,blackberries & rasberries.
2 packets gelatine (about 11gr)
(for vegetarians replace the gelatine with Agar-Agar)
420 ml Rosé sparkling ‘Maschio’ wine

Fresh tuna fish ‘polpette’ from Sicily

500gr fresh tuna, 1 egg, parsley, s & p, 5 Tbspns breadcrumbs, 50gr pinenuts, white flour, Peanut oil for frying, biological lemons

5 Boiled bio potatoes, 100gr salmon cuts, curry powder, s & p, butter for topping, semola
Mash the potatoes with the salmon pieces, s & p, and put aside.

Summer vegetable terrine

3 long zucchini, or two round ones
3 long eggplants
2 peppers (one red, one yellow)
1 cup tomatoe sauce
1 Tbspn powdered gelatine

Kamut healthy bread

This bread is very healthy & delicious!
Ingredients: 700gr organic kamut flour.
20gr natural starter (sour dough) from biological shops
salt
1,1/2 cup warm water
2 tbspns olive oil
1/2 cup walnut pieces
1/2 cup flax seeds
1/2 cup organic oatmeal

Crispy beef with chives & ginger

Couscous with rucola and toasted walnuts

Took this dish to a friends party last night.
Serving 8 people:
 4 cups hot water
salt and pepper
3 cups couscous (I used half brown organic and half yellow)
2 large handfulls raisins
2 large handfulls peeled walnuts
juice from three lemons
olive oil
4 grated carrots
large bunch of rucola
