Chocolate plum cake

This is a chocolate cake baked in a bread tin. It’s an invention with soya yogurt and olive oil to substitute butter and milk to lighten the colesterol and came out delicious.
1 cup soya yogurt, 2 eggs, pinch salt

Calamari sauce

300gr calamari
200gr tomatoe paste
1tbspn lemon juice, garlic,olive oil
dry white wine
s & p, basil (optional), chilli(optional)

 3 potatoes,450 gr white fish (also frozen)
parsley,s & p,1/2 small onion,tspn turmeric

Green Beets with soya and garlic

1 bunch of beets
2 cloves garlic, chilli
olive oil (or sesame seed oil)
soya sauce
Stir-frying requires fast intense heat.  Moisture in the leaves creates steam, rapidly wilting the greens.

Pumpkin cakes

400gr pumpkin,handful raisins (soaked in hot water to soften),2 eggs, 3tbspn olive oil,(or 5 tbsn melted buter), 1/2 cup sugar (brown and white),1/2 cup milk or yogurt, 2 tbspn raising powder, pinch salt, 1 spoon mixed ground cloves, cinnamon & nutmeg.

Cabbage leaf rolls with oriental rice

Found this beautiful cabbage at the market. What better than make stuffed leaves.
Leave the first two or three outer leaves for a soup. Take 8 or 10 large leaves, cutting off the part attached to the stalk to form a round shape. Turn the leaf upside down and cut the centre vein flat.

Calamari on the piastra

Roast some turnips, yellow squash, orange squash, fennel, red beetroot, red onion and garlic in the oven with a bit of olive oil, s & p (turning occasionally).  When ready, keep warm and on a hot ‘piastra’ cook your calamari for a few minutes on each side.  READY!

Potatoe and green beet pie

2 cups veg broth
400 gr green beets cut in small pieces
5 large potatoes sliced on the round
two pieces garlic sliced thin
