Saltimbocca alla Romana -Lunch on the terrace

1 slice of veal per person
slices of ham
salvia leaves,flour,butter,white wine, s & p

Chicken with onion and lemon relish

Chicken pieces with curry powder, onion and lemon relish.
10 pieces chicken (legs and thighs) skinned
1 whole organic lemon
2 tropea red onions
2 spoons curry powder (or make your own with a mixture of crushed turmeric, coriander, chillies, cumin, mustard, ginger, fenugreek, garlic, cloves)
2 pieces garlic
s & p, chopped parsley.

Sandy’s spinach, garlic and ricotta pasta

 Had a late summer lunch by the pool in Tuscany and my friend Sandy’ from American brought the sauce and cooked the pasta on situ.
250/300gr raw spinach, preferably small leaves,
ricotta cheese
cream cheese
3 garlic cloves.
 
Take 2/3 of the spinach and mix in a blender with all the ingredents. S & P and a little olive oil. [...]
